WINEMAKING PROCESS
CASTILLO DE SOLISTICIO: this delicious D.O. Catalunya white wine is elaborated with Moscatel and Macabeo grape varieties. Once harvest is done, grapes are lightly pressed and the cleaned must is transferred to stainless steel tanks during some hours at 10 ºC. Afterwards, the must is fermented at a controlled temperature between 15 and 17 ºC, preserving the natural fruity aromas of the grapes.
